BBQ Chicken Stuffed Sweet Potato

2 c Hawaiian BBQ Pulled Chicken (click for recipe)
2 tsp brown sugar
1/2 tsp cinnamon
4 (7 oz. each) sweet potato, raw
1. Wash sweet potato and prick with a knife or fork. Cook in microwave for five minutes. Turn potatoes over, and cook an additional five minutes.
2. Carefully remove sweet potatoes and make a slit down the middle of each potato. Press ends together to open potato enough to fill.
3. Sprinkle about 1/2 tsp of cinnamon/sugar mixture onto sweet potato.
4. Top each potato with 1/2 c of Hawaiian BBQ chicken.
Yields 4 servings, serving size 1 BBQ Chicken Stuffed Sweet Potato
