1/4 cup plain fat free yogurt (Omit for milk-free option, use Soy or Coconut Yogurt instead)
1/4 cup light Hellman’s mayo
1/4 tsp ginger root (or 1/2 tsp ground ginger)
1/2 tsp garlic powder
1/2 tsp onion powder
dash of black pepper
2 c cooked chicken breast, chopped
2 medium scallions, chopped
1/2 cup seedless red grapes, halved
1/4 cup uncooked celery, chopped
1/2 cup uncooked grated carrots
2 tbsp crushed pineapple, drained
2 tbsp chopped walnuts
Pita pocket, torilla, or Gluten-free bread of your choice


1. In a small bowl, combine yogurt, mayo, ginger, garlic powder, onion powder, and pepper. Stir until well combined. Set aside.
photo 3 (19)2. In a large mixing bowl, combine chicken, scallions, celery, carrots, pineapple, and walnuts.  Mix well.  Add yogurt sauce to chicken mixture.  Stir to combine until all ingredients are well coated.  Fold grapes into mixture. 
3. Scoop 1/3 c onto your choice of bread. Top with lettuce, if desired.
Yields about 8 servings, serving size 1/3 cup
