2 (3 oz.) packages ramen noodles, crushed
1 cup blanched slivered almonds
2 teaspoons sesame seeds
1 head napa cabbage, shredded
1 bunch green onions, chopped
3/4 cup extra virgin olive oil
1/4 cup distilled white vinegar
1/2 cup white sugar
2 tablespoons soy sauce
1 cup mandarin oranges
1. In a small saucepan bring oil, sugar, and vinegar to a boil for 1 minute. Pour into mason jar, uncovered. Cool completely (will take several hours).
2. Add soy sauce after oil, sugar, and vinegar has cooled completely. (Tip: Do not chill).
3. Line a baking sheet with aluminum foil. Spread crushed Ramen noodles, almonds, and sesame seeds onto baking sheet. Cook at 350° for 7 minutes or until golden brown. Set aside to cool.
4. In a large bowl, combine shredded Napa cabbage and chopped green onions. Add the noodle and soy sauce mixtures and mandarin oranges. Toss to coat. Serve.
