1 c Gluten-free Pancake & Waffle mix
2/3 c Rice Dreams Enriched Vanilla rice milk (or your favorite milk)
1/2 c Sugar-free maple syrup
1 large banana (or any other fresh fruit. These are delicious with blueberries, strawberries, and peaches as well)


1. Preheat oven to 350°.  Lightly mist a regular size muffin pan.  
2. In a small bowl, mix together pancake mix, milk, and syrup until well combined.  Spoon mixture evenly into muffin pan.  
3. Cut banana (or fresh fruit of your choice) into small pieces and sprinkle on tops of muffin cups.
4. Bake 12-15 minutes, or until golden brown. Allow to cool for a few minutes before eating.
Yields 11 serving, serving size 1 pancake bite
