2 c GF pancake & waffle mix
1 tsp baking soda
¼ tsp salt
½ tsp cinnamon
½ tsp ginger
½ c brown sugar
¼ c molasses
½ c unsweetened applesauce
½ c Rice Dreams Enriched Vanilla rice milk
2 tbsp brown sugar
½ tsp cinnamon


*Preheat oven to 350.
1. In a medium bowl, mix together molasses, applesauce, brown sugar, and milk.  
2. Fold in dry ingredients until just combined (don’t over mix).  
3. Spoon into greased muffin tin, about ¾ full.  
4. Sprinkle each muffin with cinnamon and sugar topping.  
5. Bake 15-20 min.   Let cool slightly before transferring to wire rack.
yields 12 muffins, serving size 1 muffin
