2 cups sugar
3/4 cup Hershey’s Cocoa
1 1/2 tsp baking soda
1 3/4 cups all-purpose gluten-free flour (I prefer King Arthur’s)
1 1/2 tsp baking powder
1 tsp salt
2 eggs
1/2 cup unsweetened applesauce
1 cup boiling water
1 cup Rice Dreams Enriched Vanilla rice milk, or your favorite milk
2 tsp. vanilla

Directions for cake:

*Preheat oven to 350. Spray a cake pan with non-stick cooking spray. Set aside.
photo 1 (61)1. In a large bowl, combine sugar, cocoa, baking soda, flour, baking powder, and salt. 
2. Add milk and water to dry ingredients.  Stir until well combined and slightly cooled.  Mix in eggs and vanilla.  Fold in applesauce until just combined.  
3. Bake for 30-35 minutes or until a toothpick inserted into center comes out clean.

Perfect Chocolate Frosting:

1/2 cup Smart balance light butter, softened 
2/3 cup Hershey’s Cocoa
3 cups powdered sugar
3 tbsp Rice Dreams Enriched Vanilla rice milk (or your favorite milk)
1 tsp vanilla

Directions for Frosting:

photo 2 (57)Combine all ingredients.  Mix until well combined. Spread on cake after it has cooled.
