Ingredients:8 oz (1/2 lb) extra lean ground turkey 1/2 c black beans, drained, rinsed 1/2 c corn 1/2 c enchilada sauce 1/2 c salsa 1/2 pkg taco seasoning
Directions:1. Cook ground turkey in skillet over medium-high heat until no longer pink. 2. Add taco seasoning, enchilada sauce, and salsa to skillet. Stir until well combined. 3. Add black beans and corn and mix well. 4. Let simmer until all ingredients are hot. 5. Serve on your favorite whole wheat or gluten-free bun. Top with cheese, if desired
