1 c gluten-free pancake and waffle mix
1/4 c oats (I used quick oats)
1 tsp cinnamon, ground
1 1/3 tsp baking powder
1/4 tsp salt
2 packets Truvia (or your favorite sweetener)
2 tbsp unsweetened applesauce
1 c Rice Dream Enriched Vanilla milk alternative (skim milk, coconut milk, almond milk, or your favorite milk…any will work)
1 tsp pure vanilla extract
1 c frozen blueberries

Directions:

image1. Preheat griddle (I set mine to about 325)
2. In a large mixing bowl, combine all dry ingredients.
3. Add in milk and vanilla. Stir to combine.
4. Fold in applesauce and blueberries. Stir until well combined, but don’t over mix.
5. Scoop mixture by 1/4 c onto hot griddle. Cook until golden brown on each side and cooked through.
 
Yields 3 servings (about 9 pancakes total), serving size 3 pancakes
