1 lb extra lean ground turkey
1 can fat free refried beans
1 c salsa, mild
3-4 large La Tortilla factory whole wheat tortillas, cut (or white corn tortillas for Gluten Free option, will need more tortillas if you use white corn because they are smaller)
16 tbsp fat free cheddar cheese (or Cheddar Flavored Soy Veggie Shreds for Dairy Free option)

Directions:

1. Preheat oven to 425.
2. Spray a muffin tin with non-stick cooking spray.
3. Start by laying each tortilla out individually on a flat surface, and use an empty can, glass cup, or cookie cutter to cut 3-4 medium circles out of each one (you want a total of 16 cut tortilla circles).
4. Press each cut tortilla circle into muffin cup using your fingers. Set aside.
5. Cook turkey in a skillet over medium-high heat until cooked through and no longer pink.

6. Add refried beans and salsa to turkey. Mix until well combined. 
7. Scoop ¼ cup of meat and bean mixture on top of each tortilla. Top each “mini pizza” with 1 tbsp of cheese.
8. Bake about 10 minutes or until cheese is melted.
 
Yields 5 1/3 servings, serving size 3 mini pizzas
