1/2 c Smart Balance Light butter
2 c white sugar
4 tbsp Hershey’s cocoa powder
Scant 1/2 c *Rice Dreams, Vanilla rice milk (or your favorite milk)
1 c creamy peanut butter
1 tbsp vanilla extract
3 1/2 c quick oats 

Directions:

1. In a large sauce pan melt butter.
2. Add sugar, cocoa powder and milk. Bring to a boil and cook for 1 minute.
3. Remove from heat, stir in peanut butter until well combined.
4. Add vanilla. Fold in oats.
5. Scoop heaping tablespoons full of batter onto wax paper. Allow to set before eating.
 
Yields about 25 cookies, serving size 1 cookie

*Adding too much milk will cause the cookies to not set up. Don’t fill your 1/2 cup completely full. Fill it just below the rim of the measuring cup for best results.
