Ingredients:

2 tsp sugar (or 1 packet of truvia)
1 tsp cinnamon
1 tsp vanilla
1 c fat free cottage cheese
6 large egg whites
1 c multi grain oatmeal (or your favorite gluten-free oats)

Directions:

1. Preheat griddle. Spray with non-cooking spray.
2. Combine all ingredients into blender or food processor. Blend ingredients until well combined and smooth.
3. Scoop ¼ c of oatmeal mixture onto griddle. Cook on each side until golden brown and cook through.

Optional Topping: 1 tbsp pecans or walnuts, sliced banana, and 1/8 c sugar free maple syrup. YUM!
