3 c Bob Red Mills Gluten Free brownie mix
1/4 c Egg Beaters Original
1/2 c Smart Balance Light butter, softened
1/2 c water
1 tsp peppermint extract
1/4 c powdered sugar


1. Mix butter, water, egg and peppermint extract.
2. Add brownie mix and stir until lumps are gone and color lightens, about 2 minutes.
3. Refrigerate dough for 2 hours (or overnight).
4. Preheat oven to 350.
5. Put powdered sugar into a shallow bowl.  Drop tablespoon-sized dough balls into powdered sugar and roll until well coated.
6. Place sugar-coated balls on cookie sheet.  Bake for 15 minutes.  Let stand on cookie sheet for 3 minutes, then move to wire rack.Yields 36 tablespoon-sized cookies, serving size 1 cookie
