Breakfast, Gluten/Milk Free, Weight Watcher Friendly
1 c Gluten free pancake and waffle mix (or your favorite mix)
1 1/3 c water
1/4 c egg beaters (or 1 large egg)
1/2 c pumpkin, canned
1 1/2 tbsp brown sugar
1 tsp pumpkin pie spice
1/4 tsp cinnamon
1. In a small bowl, mix together pancake/waffle mix, pumpkin pie spice, and cinnamon.
2. In a large bowl, combine water, egg beaters, pumpkin, and brown sugar until well combined.
3. Gradually add dry ingredients to wet ingredients until mixed well.
4. Add 2/3 c mixture to a hot waffle iron until golden brown.
Yields 4 servings,
