Homemade Egg McMuffin

Breakfast, Gluten/Milk Free, Kid-Friendly Dishes, Sandwiches, Weight Watcher Friendly
1/4 c egg beaters
1 Thomas multigrain English muffin, light, toasted (Or your favorite gluten-free English Muffin, Glutino has a great gluten-free English muffin)
1 piece Canadian bacon
1 Fat Free sharp cheddar cheese slice (Or Go Veggie! Soy Cheddar cheese slice)
Dash of black pepper
Dash of salt
1. Heat non-stick skillet over medium heat. Cook egg beaters until scrambled.
2. Place eggs on toasted English muffin.
3. Place Canadian bacon in skillet and cook until heated through, about 2 minutes on each side. Place on top of eggs.
4. Top with cheese slice, salt, and pepper.
Yields 1 serving, serving size 1 egg mcmuffin
