4 boneless, skinless chicken breasts (4 oz. each)
8 oz. 0% Greek yogurt, plain
1/4 c Parmesan and Romano blend cheese, grated
1/4 c Italian seasoned bread crumbs
1 tsp Italian seasoning
1/2 tsp Lawry’s seasoning salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder


1. Preheat oven to 350. Line a baking sheet with aluminum foil and spray lightly with non-stock cooking spray. Set aside.
2. In a dry skillet, heat bread crumbs over medium heat, stirring frequently until browned and toasted. Transfer to bowl. Set aside.
3. In a small bowl, combine salt, pepper, paprika, onion powder, and garlic powder. Mix well.
4. Rinse and pat dry chicken breast pieces and lay out on a plate. Rub seasoning mix evenly on both sides of each chicken piece. Place each breast on prepared baking sheet.
photo (77)5. In a small bowl, stir together yogurt, Italian seasoning, and grated cheese. Spoon evenly over chicken pieces (about 1.5 tbsp per chicken breast). Spread mixture over entire chicken breast with spoon.
6. Sprinkle 1-1.5 tbsp prepared toasted bread crumbs over each chicken breast.
7. Bake for 30 minutes. Remove and let rest for 5-10 minutes before serving.
8. Serve over steamed brown rice or your favorite pasta.
