4 c diced chicken, cooked
4 c brown rice, cooked
¾ c corn
1 1/4 c black beans, drained, rinsed
1 cup 0% Greek Yogurt, plain
4 oz. green chilies
½ cups salsa
1 1/2 c fat free cheddar cheese, shredded


photo 1 (91)1. Preheat oven to 350F. Spray a baking dish with non-stick cooking spray. Set aside.
2. In a large bowl, combine rice, yogurt, green chilies, salsa, corn, and black beans and mix thoroughly to combine.
3. Fold in chicken pieces and 1 c of cheese. Be sure to incorporate the yogurt and cheese thoroughly.  Season with salt and pepper, if desired.
4. Transfer to prepared dish and top with remaining 1/2 c cheese. Bake for 25-30 minutes, or until heated through and cheese is melted. 
Yields 8 servings, serving size 1 c
