2 tbsp Smart Balance Light butter
1/2 c onion, diced
1 garlic clove, minced
1 c dry orzo
1 can (14.5 oz.) fat free chicken broth
1 tsp basil, dried, ground
1/4 tsp black pepper
1/2 c Parmesan cheese, shredded
1 c chicken, cooked, chopped


1. In a medium pot, melt butter.  Add onion and garlic, then saute over medium heat for 5 minutes.
2.  Add dry orzo to onion. Stirring constantly, saute until orzo lightly browns (about another 5 minutes).
3. Pour in chicken broth and bring to a boil. Once you begin to see bubbles forming, reduce heat to medium-low, cover and simmer for 18 minutes (or photo 1 (93)until the liquid has been absorbed).
4. Turn off heat. Remove lid, add in basil, pepper, Parmesan, and cooked chicken. Stir until well combined. Replace lid and keep over residual heat until chicken is heated through and cheese is melted. 
Yields 4 servings, serving size 1 cup
