Farmer’s Casserole

Breakfast
Ingredients:
6 c diced potatoes (I used Simply Potatoes diced potatoes with onion)
1 tbsp extra virgin olive oil
1 1/2 c reduced fat Colby & Monterrey blend cheese, shredded
6 slices Canadian bacon, diced
2 sliced green onions
24 oz. (2 cans) fat-free evaporated milk
2 c Egg Beaters egg substitute
1/4 tsp salt
1/4 tsp black pepper
Directions:
1. Preheat oven to 375°.
2. Heat oil in a non-stick skillet over medium heat. Add potatoes to skillet and cook until lightly browned.
3. Add cooked potatoes to bottom of a casserole dish. Layer ham, cheese, and green onion on top of potatoes.
4. In a large mixing bowl, combine Egg Beaters, evaporated milk, salt, and pepper. Stir to combine.
5. Pour egg mixture potato mixture in casserole dish.
6. Bake for 45-55 minutes or until egg is set. Remove from oven, let set for 5-10 minutes. Cut into 15 equal portions. Serve immediately.
Yields 15 servings, serving size 1 piece

So many processed food substitutes in this recipe. Can it be made with real food?

I appreciate the “processed” foods list, as a quick alternative on those days when time is in short supply. It’s easy enough to go the “real” route on those days when time is not an issue. The key to any diet is moderation. Thanks for all the wonderful recipes. I am cooking for the elderly who are sometimes hard to please. These recipes give me plenty from which to springboard.

If you prefer real eggs as I do just use 8 eggs. It sounds like a lot but remember this serves 15 people and you don’t eat this all the time. You are free to use “real” food as I do. I feel our bodies aren’t made to digest all these processed foods so I only eat the real stuff and don’t have any problems.

Made this for a weekend breakfast for a crowd. It was yummy and all loved it. Only change was I added chopped jalapeño before the cheese. I used a disposable pan, a little bigger than 9 x 13. Made for easy cleanup. Will be a keeper for the files.

Loved this recipe, use normal boiled potatoes and then sliced, 8 eggs as was suggested in one of the comments, went a long way and was delicious.
